Created in Parma, Italy, using methods acquired by producers across multiple generations, the bhn No. 8 2022 Parmigiano Reggiano is made from the Braunvieh (or, Bruna Alpina) breed and is aged 24 months. Its name evokes the tight bond between this product and its territory, recalling undisputed quality and authenticity records. The milk, sourced from local cowsheds, is raw thanks to the rigorous and consistent analysis, resulting in high quality microbiological features with wellness properties.  This cheese gently ferments in wooden molds and is finally transferred to aging rooms, where it acquires an inimitable flavor, grainy hue, and soft, creamy texture – distinguishing features. Ripe with enzymes, the cheese is nutritionally rich. Signature characteristics of the cheese are also defined by environmental factors which require precise and careful quality control, in order to honor the delicate balance among milk, environment and dairy culture, and preserve the essence of the cheese. 100% natural, Parmigiano Reggiano is naturally lactose free, and without any additives or preservatives.  The end result is a Parmesan which is decidedly pungent and perfectly sweet - with only 350 units produced.

Parmigiano-Reggiano works flawlessly in many pastas and risottos, but can also play a key role in soups, salads, cooked vegetables, beef carpaccio and savory meat or vegetable pies.

How to Serve:
Parmigiano-Reggiano is fantastic served in room-temperature chunks, as the star of a simple appetizer. It works well with sliced pears and toasted hazelnuts, dates and walnuts, or crunchy celery hearts drizzled with good olive oil. A few drops of authentic aged balsamic vinegar can enhance Parmigiano-Reggiano’s flavors without overwhelming them.

    FOUNDERS AND BACKGROUND

    Founders Marco Prete and Cristina Fragni have spent a lifetime in close contact with the top European winemakers and cellar masters, and have spent decades on their shared passion for learning, tasting, and even assisting in the production of fine wines.


    After relocating to NYC in 2013, they found that many of their favorite vintages were not available in the US. Inspired by a lack of available inventory on the usual channels, they decided that it was essential to them personally and professionally to create a bespoke, world-class collection of fine wines available for US import.
